Uru Mas (Pork in a traditional way)

Pork!!! What do you know about it? Let’s take a look. Pork is the world-famous culinary name for the meat of domestic pig. And also, it is the most commonly consumed meat worldwide (don’t be surprised). This food has a looooooong history. It is dating back to 5000 BC.
Pork can be eaten both freshly cooked and preserved. Sausage, Ham, Smoked Pork and Bacon are examples of preserved pork.
Pork is very famous not only in western world and Europe but also in Asia (in non-Muslim countries). Pork is highly prized for its fat content and pleasant texture.
                     
INGREDIENTS
*Pork 1 ½ kg
*Sliced Onions
*Chopped Ginger 2 teaspoons
*Chopped white Onions 2 teaspoons
*Chili pepper 10-12
*Cloves 6
*Cardamom pods 6
*Indian tamarind (Goraka)
*Roasted curry powder
*Curry leaves (optional)
*Oil 1 tablespoon
*Black pepper
*Salt
*Cinnamon chips

Directions

*Firstly, put some oil into a frying pan and place it on the stove.
*After the oil get hot, add Cinnamon chips, Cardamom, Cloves and dried Chilly pepper into the pan. You can recognize whether those things fried or not, when it is fried it gets little dark color and you can smell a wonderful smell.
*Then get the Indian tamarind and dip it in the hot water. Then get Indian tamarind out of the water and blend it until it becomes a paste.
*Then take the Ginger, white onions, Onions, curry leaves and blend it together. After that mix it with the Indian tamarind paste that you have prepared before.
*Next take the Pork pieces and mix them well with the paste that you have already prepared.
*Then Pork pieces should be kept at least an hour (for the purpose of seasoning)
*After that put the Pork pieces into a pan and add 1 ½ cups of water. Then place the pan on the stove. Let it be cooked until the Pork become little bit soft. At that moment pieces of Pork are little bit wet.
*If you feel Pork isn’t boil enough you can add more water.
*Now add the mixtures that you have prepared in the 2nd step (Cinnamon, Cardamom, Cloves, dried Chili pepper). Mix them well.
*Now add salt and black pepper as you wish.
*Keep the pan on the stove 10-15 more minutes.
*Now if you feel Pork is cooked enough you can turn off the stove.

*Now it is time to enjoy the traditional Pork curry of Sri Lanka.
