Chicken stew (in a traditional way)



Stews are a very historic meal. According to the written history world first stews are reported in Japan. It is a way of low-cost cooking. Stews and soups are very similar. Soups are always served in bowels but stews are thick enough to be served on a plate.
Sri Lanka is a country full of spices. So, most of the foods of Sri Lanka are spicy. There is no exception about Chicken Stew.
Now let’s get into works.

Ingredients
·      
      Chicken 1kg
·       Few sliced Onions
·       Sliced potatoes 100g
·       Chilies 5 or 6
·       Coconut milk powder (concentrated) 100-120ml
·       Coconut milk powder (normal) 200-220ml
·       Black pepper 1 ½ table spoons
·       Turmeric powder 1 tea spoon
·       Mustard cream ¼ tea spoon
·       White onions (as you wish)
·       Ginger (as you wish)
·       Cardamom 3-5
·       Curry leaves
·       Cinnamon (as you wish)
·       Salt (as you wish)
·       Vegetable oil or sun-flower oil
·       Cumin ½ tea spoon
·       Fennel 1 table spoon


Directions

Firstly, wash the chicken well and cut it into pieces as you like. But do not cut into too big pieces.
·       Then add black pepper, cumin, fennel, turmeric powder, ginger, white onions into a pan and mix them well. When you are mixing them add some water to it.
·       Now mix this mixture with the chicken and don’t forget to add salt. Then keep it for 30 minutes until it gets seasoned. We call it ‘’marination’’.
·       Then add some oil into a pan add mustard cream into it.
·       After sometime add onion into that pan let it be fried until it gets golden color. But don’t let it be over fried.
·       While onion is being fried, add curry leaves, green chili, cardamom, cinnamon and stir for 2 minutes.
·       Now add chicken (seasoned) and potatoes into this pan.
·       Now increase the heat and close the lid of the pan. Keep it this way for 4-6 minutes.
·       Then open the lid and stir and mix all of them again and close the lid again. let it be cooked for another 3-5 minutes.
·       After that open the lid let it be cooked until water become vaporized.
·       Now decrease the heat and add coconut milk powder liquid (normal) into the pan cook it another 2-4 minutes.
·       Then decrease the heat more and add coconut milk powder liquid (concentrated) and close the lid and cook another 2-3 minutes.
·       Now taste it little and add some salts if it needs to be added.
·       Well! well! Well! Now you have prepared the most delicious chicken stew that you prepared in your whole life.
